You can go to eBay and look for joystick replacements. An eBay search for 'GameCube joysticks" brings a bunch of listings of what you need. Fortunately, this should only set you back about $5 at the most.
When you open up the controller, just pull up the broken joystick cap and pop on the new one. They just sit on a "rod" on the joystick component. Simple!

I found pretty much everything about GameCube controller on Amazon. It is faster delivery compared to eBay and sometimes cheaper :).
