I replaced the battery, and then after assembling my son's switch lite, the left sode joystick won't work right along with volume and the power off button. The ribbon over the battery cable is torn, could that be the issue?

Yeah, that's almost certainly the problem; that cable is the one that connects the left hand circuit board to the motherboard; meaning the volume and power buttons, along with that joystick and possibly the touch screen are not going to work until you replace that cable. Here's one of the first ones I came across on Amazon.
I'm afraid you may be on your own as far as instructions on how to replace it, though. If you scroll through the Screen Replacement guide you should be able to find the part where the other end of it is disconnected, but you'll have to figure how how much is going to have to come apart in order to get it out of where it's located.
