I have a white iPhone 4s through Sprint, and I am wondering if i can replace the white glass backing with another one that is a different color. Also, if i do this, will it void my apple care insurance? Even if I switch to the old backing again before I take it to Apple if it needs fixed?

You can replace broken ones with oem rear glass. You should be fine apple may not notice. You change it to a color glass, they will notice.
You turn any screws on an apple product it does void your warranty.
Buy, sell, ship in for repair.
