Why can't I hear incoming calls (except on speaker or earpiece)?
I have a iphone 6s Plus, earpiece and speaker work, but I cannot hear incoming calls unless through the earpiece or speaker. Which of the phone microphones need to be replaced?

When I used the word ‘earpiece’ I meant for the ‘headphone’ To clarify , I under stand there are three microphones: One for ear, one for speaker, one for headphone. The headphone and speaker work. The one for ear does not.

Try replacing just the earpiece speaker up the top by the front camera assembly, using this part below;
iPhone 6s Plus Earpiece Speaker
If replacing this doesn’t resolve the sound issue you may need to replace the entire front camera assembly as it transmits the sound data from the logic board to the earpiece speaker, but attempt the easier and cheaper fix first :)

I may be a bit confused here but if not through the earpiece speaker or the loudspeaker, where do you want the sound to come from??

When you're saying microphone, do you mean that nobody is able to hear your audio on a call or do you mean the speaker that makes sounds. I believe you mean that your loudspeaker works fine and audio can come through headphones, but won't work on the earpiece speaker at the top of the phone when on a call?
