My iPhone 7 Plus is totally shot, they told me the motherboard is fried and can’t be fixed, I don’t have insurance on it and Apple said the warranty is expired. What do I do with the phone from here? It’s in perfect condition (on the outside) so I feel weird just discarding it.

You could still sell it for a small price on eBay, some shops and individuals buy them for parts. You may get a little bit more for it being in perfect condition. Some rich people ding up their phones and just want it to look new again. I’ve done a few body replacements before, with phones they bought on eBay.

You could look on eBay for the same phone, one which is badly damaged on the outside but which works perfectly on the inside. (Being damaged on the outside may lower the price considerably, making it worth your while to buy it.) Use the parts from your current phone to replace the “outside” of the phone you get from eBay.
Make sure that the seller removes the phone from his Apple account, so that you can add it to yours.
