By default there is adhesive sticking behind the metal shield above the motherboard. They come like that. It's just really sticky adhesive tape.

The process I use involves a variable temp heat gun set at anywhere from 180-200 degrees to help loosen the adhesive and slowly work the shield up using a ESD safe plastic like spudger to help seperate the two. It take a bit of work an patience but it will come loose.

Will a hairdryer work too

That will help loosen the adhesive but may require more time with applying heat whereas I do not believe hair dryers reach the temps necessary for what is required. If it is all you have available though it is absolutely worth a shot.

Because if you used a heat gun for too long wouldnt it melt the motherboard or at least damage it

As long as it is set between 180-200 it will be okay. I wouldn't leave it blowing on it directly for a extended period of time, but enough till you feel the adhesive loosen. I personally use a custom made hot plate that is set in that range for all my device repairs that have the screens adhered on. If monitored and done correctly and cautiously, the device will be perfectly fine.
