J’ai fait ce tutoriel, il y a quelques années ou les SSD étaient installés avec une partition Mac extended. Depuis, il y a APFS qui est sortie et Trim est devenu obsolète, car APFS gère mieux les fichiers que Trim.
Donc, ça n’a rien à voir avec Big Sur, mais je vais tout de même rajouter une mention au tutoriel.

On start your Mac press the touches CMD + R, when the recovery mode screen appeared, click on Utilities in the menu bar followed by Terminal. On the Terminal enter the following command : resetpassword and press Return
What macOS do you have on your MacBook Pro ? If your Mac is using macOS Sierra or earlier, add
--applicationpath /Applications/Install\ macOS\ Catalina.app
So,
sudo /Applications/Install\ macOS\ Catalina.app/Contents/Resources/createinstallmedia --volume /Volumes/Untitled --applicationpath /Applications/Install\ macOS\ Catalina.app
Or if you have macOS High Sierra or higher,

No, you can’t but, you can format your usb drive and create the partitions and for then create the bootable macOS on a partition.
