My lexmoto zsx-r 125 having acceleration lag after 15 min ride

So my bike starts up straight away with no issues, it sounds amazing and goes like the wind for the first 15 mins, out of nowhere it becomes very unresponsive and I have to very slowly crank the accelerator to get any power at all, as if I turn it just a cm too far it'll loose all power and choke for a brief second, slowly lurch forward then kinda slow down again, almost like opening and closing the clutch without using the accelerator which is causing me to become anxious in rush hour traffic as people drive like idiots here and may over estimate my acceleration.

It's very strange as it runs perfectly for the first 15 mins every single time, I'm assuming this could be a bad spark plug but its just been replaced by the last owner, it does have a custom exhaust tho, not sure if that would cause any issues.

Going to take it to a shop just in case but thought id try my luck here if its a home fix I can do.

(There is fresh gas in the tank)

Happy to take any pictures to help with diagnosis, I just want this bike to run smoothly as my old honda was stolen and I miss being able to actually accelerate :'D

This sounds like a temperature related issue, at around the 15 minute mark is where you will find nearly all temperature related issues raise their heads. As you've had a custom exhaust fitted, I'd suspect a pipe runs now too close to an important sensor, like your throttle sensor, MAP Sensor, MAT Sensor or Coolant Temperature Sensor. You can trace it through and bring a bottle of ice-cold water with you to pour over the suspect sensor when it plays up if you're careful or even better, a can of Freeze-it. Old mechanics here used to do the exact same thing to diagnose temperature-related distributor issues successfully. What year was it built? Would need to check the manual for sensor locations. Once found, just buy and fit a new genuine sensor (have found lots of after-market types also have temperature issues). In the long run, you might want to get the exhaust pipes re-routed.
