How to choose a good surface treatment for PCB?

Recently, I have read an article about PCB surface treatment . However that article introduces some ways to deal with the surface treatment of PCB, like hot air leveling (tin spraying), organic solderability preservative (OSP), all-plate nickel plating and so on. But the fact is I can't understand them. I have heard them from books or others, but never use them in practice. I just feel confused, so I need a more straightforward explanation, in other words, I need more details about this not only in theory but also in practice.

So here my question is that I don't know how to choose a good surface treatment for PCB. I hope you can help me choose a good one or tell me details about them.
