hard drive and optical drive changing
can we change the new 2013 new iMac hard drive and optical drive ourselves easily? or it had become fix style in imac.

The newer iMacs don't have optical drives. The '11 models are the last ones to have them.
As to replacing the HD while it could be done you have to deal with the onboard thermal sensor issue with the replacement drive. We're still waiting for the new SMART spec'ed HD which offer compatible HD's with Apples' method of access.
Frankly, I would strongly recommend you get the model with the sized drive or drives you want Vs trying to upgrade it and worry about future upgrades when you are ready.

The best way to replace any such things is to follow the service manual or use some online tutorials available on YouTube. But if you are not confident about your technical skills then I shall prefer you to visit some hardware shop.

David - You need to add something useful don't point to something they clearly don't have nor can get (Apple only offers the service manuals to authorized repair centers). The better answer here would have been to aim them to the just created teardown so they could see how it comes apart. As this is so new a system there isn't any 3rd party tutorials yet (written or video).
