I had the same thing tonight. The change to Canada was temporary (on a restart, back to no channels except computer and settings), and lost some channels (HBO)
 
I just did a full RESTORE. I had to sign back into iCloud and my WiFi.

HOWEVER, MY APPLE TV IS NOW '''FIXED''' and is back to normal with US as region, and ALL channels showing as before.
